This recipe feature provides an at-a-glance list of healthy and convenient foods to pack in your cooler for your day of fun in the sun.
Envision this…you just finished an intense beach volleyball match, a run in the sand, or some laps in the water…you’re glycogen stores are depleted and you’re starving… you reach for that sandwich, drooling as you go to sink your teeth into it and what do you get? A soggy mouthful and the sound of sand grinding between your teeth as you contemplate whether or not to swallow this disappointing bite…ewww, what a let down!! How can you avoid it? Choose foods that are completely sealed, eaten with a utensil, are washable, and/or won’t melt or get soggy! Here are a few of my favorites:
CONVENIENT FOODS FOR YOUR FUN IN THE SUN:
Whole fruits that are washable and don’t require peeling (i.e. apples)
Cut up veggies
Hard boiled eggs, pre-peeled
Granola bars
Naked turkey burgers and grilled red potatoes (see below recipe)
Yogurt
Unsalted nuts
Water bottles (it’s so important to stay hydrated in the sun!)

“Naked” Turkey Burgers with Grilled Red Potatoes
Ingredients:
Turkey Burger:
1 lb. extra lean ground turkey
1 egg white
1/2 tsp. Worcestershire sauce
1/4 c. finely chopped onion
1/4 tsp. garlic powder
1/4 tsp. poultry seasoning
2 tsp. Dijon mustard
Red Potatoes:
8 oz. red potatoes, halved
Cooking Spray
½ tsp each: garlic powder, parsley, black pepper, sea salt (if desired, to taste)
How to Prepare
1 Fire up the grill!!
2 Combine all ingredients for turkey burgers together in a large bowl. Mix well using your hands – yes, your hands! Divide the mixture into 4 even parts and shape into 4 patties. Set aside.
3 Put red potato halves in a bowl and spray with cooking spray. Add seasoning and stir to evenly coat potatoes.
4 Place potatoes on a piece of aluminum foil and throw on the grill! After 10 minutes, add the burgers to the grill and cook to your desired temperature. The potatoes should be done by the time the burgers are cooked (stab with a fork to ensure desired tenderness).
5 Apportion 2 burgers and half the potatoes into two separate containers for your trip to the beach! (Save one container for later or share with a friend). Enjoy!!

Per serving (serves 2): 353 calories, 60.8 grams protein, 21.9 grams carbohydrates, 2.5 grams fat.
