Chef’s tip: Forget the premade packets. Make your own all-purpose taco seasoning by stirring together 1 tsp dried oregano, ½ tsp chili powder, ½ tsp cumin powder, ½ tsp onion powder, ½ tsp garlic powder, ½ tsp paprika, ½ tsp salt, and ¼ tsp black pepper.

Ingredients

  • 1 tbsp canola or grape-seed oil
  • 1 yellow onion, chopped
  • ½ tsp salt
  • 2 tbsp Cajun or creole seasoning mix
  • ¾ lb extra-lean ground beef
  • 1 cup fat-free refried beans
  • 1 cup tomato sauce
  • 8 corn tortillas
  • ½ cup reduced-fat sour cream
  • 2 plum tomatoes, seeded and chopped
  • 4 cups chopped romaine lettuce
  • 1 cup shredded aged cheddar cheese
  • lime wedges

Directions

  1. Heat oil in a large skillet over medium heat. Add onion and salt and cook, stirring occasionally, until onion is softened and starting to brown, about 5 minutes. Add seasoning mix and heat 30 seconds. Stir in ground beef and heat until just slightly pink, about 4 minutes. Stir in refried beans and tomato sauce. Simmer for 3 minutes.
  2. Heat oven to 375°F. If needed, wrap tortillas in a damp cloth or paper towel and microwave on high until pliable, about 30 seconds. Lay tortillas on a work surface and coat both sides with cooking spray. Carefully drape each tortilla over individual bars of the oven rack. Bake until crispy and golden, 7 to 10 minutes.
  3. To assemble tacos, stuff beef mixture into tortillas and top with sour cream, tomatoes, lettuce, and cheese. Serve with lime wedges.
